The recipe – step by step

1. Whisk bean flour with warm water into a thick smooth batter – like pancake batter.
2. Blend onion and pepper; fold into the batter.
3. Add palm oil, crayfish powder, crumbled cubes and salt.
4. Optional: quartered boiled eggs or flaked fish folded through.
5. Pour into greased moi moi pouches or ramekins, filling two-thirds.
6. Steam 45-60 minutes until firm; cool slightly before unwrapping.
