The recipe – step by step
- Boil seasoned meat or fish with onion until nearly tender.
- Add the palm fruit concentrate and 400ml hot water; stir to a smooth soupy consistency.
- Simmer 25 minutes until oil rises to the surface – that is the banga magic.
- Season with banga/pepper soup spice, crayfish powder and cubes.
- Drop in uziza leaves and any fresh fish; simmer 8 minutes.
- Serve with starch, pounded yam or eba.
