The recipe – step by step

1. Parboil and wash the rice, then steam until fluffy – ofada style.
2. Spoon the ayamase sauce into a pan and warm gently over low heat.
3. Add a spoonful of palm oil and crayfish powder to deepen the sauce.
4. Fold in your pre-cooked meats or halved boiled eggs.
5. Simmer together 10 minutes so everything drinks the green pepper heat.
6. Wrap or plate rice, ladle the ayamase over and serve with extra sauce on the side.
