Ingredients

  • Ivory Island Best Yam Flour 1Kg
  • Ewedu
  • Locust Beans (Iru)
  • Authentic African Crayfish Powder Seasoning
  • Ivory Island Best Nigerian Flavour Palm Oil 500Ml

You will add fresh

  • Assorted meat
  • 1 onion
  • Fresh peppers (for the stew)

Method

  1. Boil water briskly and pour yam flour in while stirring hard – no lumps allowed.
  2. Keep turning with a wooden stick until smooth and stretchy; cover on low heat 5 minutes.
  3. Simmer ewedu leaves with a pinch of potash-free bicarbonate until silky, then blend or whisk smooth.
  4. Season the beans-based gbegiri or meat stew with locust beans, crayfish and palm oil.
  5. Plate amala, drown it in ewedu, then pour the stew alongside.
  6. Top with assorted meat and serve immediately – amala waits for no one.
