You will add fresh
- Assorted meat
- 1 onion
- Fresh peppers (for the stew)
Method
- Boil water briskly and pour yam flour in while stirring hard – no lumps allowed.
- Keep turning with a wooden stick until smooth and stretchy; cover on low heat 5 minutes.
- Simmer ewedu leaves with a pinch of potash-free bicarbonate until silky, then blend or whisk smooth.
- Season the beans-based gbegiri or meat stew with locust beans, crayfish and palm oil.
- Plate amala, drown it in ewedu, then pour the stew alongside.
- Top with assorted meat and serve immediately – amala waits for no one.
