The recipe – step by step

1. Boil seasoned catfish or goat gently with onion until flaky-tender.
2. Crumble in a small ball of poundo as natural thickener.
3. Add pepper soup spice, crayfish powder and cubes; stir as the soup turns creamy-white.
4. Simmer 15 minutes, adding hot water to keep it flowing.
5. Tear in uziza leaves; simmer 4 minutes off strong heat.
6. Serve with pounded yam or rice – traditionally eaten at celebrations.
