The recipe – step by step

1. Season and boil your meat or fish with onion until just tender.
2. Add 1.5L water, crumbled seasoning cubes and bring to a rolling boil.
3. Stir in pepper soup spice and crayfish powder; simmer 15 minutes so the broth turns aromatic.
4. Drop in uziza leaves and simmer 5 more minutes.
5. Adjust salt and heat level to taste.
6. Ladle piping hot into bowls – best enjoyed as a starter or late-night comfort bowl.
