Assorted meat, snails or beef, spinach, 1 onion, fresh peppers

The recipe – step by step

1. Boil assorted meats with onion until very tender.
2. Dissolve achi in cold water and stir into boiling stock – instant velvet thickness.
3. Add palm oil, crayfish, pepper and cubes; simmer 10 minutes.
4. Return meats and snails to the pot.
5. Add washed bitter leaf and spinach; simmer 6 minutes.
6. Serve with pounded yam, garri or fufu.
