The recipe – step by step

1. Boil seasoned meat with onion until tender; reserve stock.
2. Form egusi paste lumps with water and drop into boiling stock; cook 15 minutes.
3. Add palm oil, blended pepper, crayfish and cubes; simmer until glossy.
4. Stir in greens and return the meats; simmer 5 minutes.
5. Prepare pounded yam with hot water, turning until stretchy.
6. Plate together and eat with your hands, the proper way.
