Half a pineapple, 2 lemons, sugar or honey to taste, ice

The recipe – step by step

1. Rinse the dried hibiscus leaves once in cold water.
2. Boil leaves with sliced ginger and pineapple peel for 12 minutes.
3. Turn off heat and let steep 20 minutes for deep ruby colour.
4. Strain, sweeten while warm, and chill completely.
5. Serve over ice with lemon slices – float a splash of coconut water on top for a modern twist.
6. Pair with chin chin for the complete street-side refreshment experience.
