You will add fresh

Chicken or beef, 2 onions, 3 fresh tomatoes, red bell pepper, scotch bonnet

The recipe – step by step

1. Blend tomatoes, bell pepper, scotch bonnet and 1 onion into a smooth puree.
2. Fry sliced onion in hot oil, add the puree and cook down 10 minutes until thickened.
3. Stir in tomato paste, curry, thyme and crumbled seasoning cubes; fry 3 minutes.
4. Add washed rice and stir until every grain is coated in the stew base.
5. Pour in hot water to just cover the rice, cover with foil and lid, steam on low 25 minutes.
6. Rest off the heat 5 minutes, fluff with a fork and serve with fried plantain.
