You will add fresh

Chicken thighs or drumsticks, soy sauce, brown sugar, garlic, ginger, scotch bonnet peppers (to taste), lime, 1 onion, vegetable oil, salt & pepper.

The recipe – step by step

1. Marinate: mix jerk seasoning, soy sauce, sugar, garlic, ginger, scotch sonnet, lime juice, thyme, allspice, salt and pepper. Coat chicken, cover and marinate at least 1 hour (overnight for best flavour).
2. Preheat oven to 200°C (180°C fan) or prepare a grill.
3. Lay chicken on a baking tray or grill rack, scatter sliced onions around and drizzle with oil.
4. Roast or grill 45-60 mins, turning halfway, until cooked through and slightly charred.
5. Rest 5 mins and spoon over juices before serving.
