The recipe – step by step

1. Slice meat thinly against the grain into skewer-sized strips.
2. Coat strips lightly with oil, then press suya spice generously onto every side.
3. Skewer and rest 10 minutes so the spices bond.
4. Grill on high heat 4-5 minutes per side until charred edges form.
5. Serve piled on sliced raw onions and tomatoes with extra suya spice dusted on top.
6. Share the chin chin afterwards as the sweet finish to suya night.
